LEARN HOW TO COOK THIS PERFECT BEGINNER 15min STIR FRY NOODLES RECIPE TODAY!
LAY HO LAY HO! I totally get those days where my brain is mush and I just want to cook something fast, easy, and with minimal clean up. Join me in this episode and learn how to make a quick 15min udon noodle stir fry recipe today!
Ingredients:
2 pieces garlic
1/2 red onion
small piece ginger
100g broccolini
70g shimeji mushrooms
2 sticks green onion
200g udon noodles (pre-cooked pack)
1 tbsp soy sauce
1 tsp dark soy sauce
1 tbsp sriracha
1 tbsp plantbased oyster sauce
splash of toasted sesame oil
1 tbsp avocado oil
1/2 tsp sesame seeds
Directions:
1. Finely chop the garlic and ginger. Slice the red onion and chop the broccolini into bite sized pieces
2. Cut off the base of the shimeji mushroom cluster to discard. Set the mushrooms aside. Chop the green onions into small batons
3. Bring some water to boil for the noodles. Soak the udon noodles for 3-4min. Use chopsticks to gently loosen the noodles
4. Make a stir fry sauce by combining the soy sauce, dark soy sauce, sriracha, plantbased oyster sauce, and toasted sesame oil
5. Heat up a nonstick pan to medium heat. Add the avocado oil followed by the garlic, ginger, and red onions. Sauté for about 1min
6. Add the broccolini and green onions. Sauté for 2-3min
7. Add the shimeji mushrooms and sauté for about 1min
8. Strain out the udon noodles and add to the pan. Add the stir fry sauce and sauté for another 2-3min
9. Plate the noodles and sprinkle over some sesame seeds to serve

Hi Wil, just to say a big thank you for helping me to enjoy my food once more! As an over 80 yrs unenthusiastic cook, ( apart from the odd curry) I am vegetarian and just love that I can spend such a short time at preparing and cooking my food yet have still have fresh, tasty and never-before flavours to enjoy. I have managed to get gochugaru and vegetarian mushroom sauce here in the uk so feel I must be getting close to your authentic flavours. I’d like to remind anyone reading this that your colourful, well set out cookbooks are online too and easy to use that way. Stay safe, keep the recipes coming!

Interesting to read your comment. I'm in my late 60s and for the past 2 years, since the beginning of the pandemic, I find the thought of eating anything other than vegetarian absolutely repulsive. Not quite vegan yet, but definitely vegetarian. I, too, am thrilled to follow this channel. I have purchased one of his cookbooks, and will shortly order the other one. Cooking for one has been made so much easier, and there's not much cleanup. All positives! Amazon is a great resource for vegetarian substitutions. I hope the channel will begin a store where we can shop and locate items easily, or at least provide links where he will receive compensation.

When Im making one of your recipes, I have the tablet open with the desc box for ingredients and the video running and our cockatoo knows she'll be eating one of her favorites. Her playtop is facing the kitchen and she super extends her neck to spy on what's in the pot when I'm testing for doneness (I use the dry udon noodles). She gets plain noodles since she can't have the salt in the soy sauce but she loves them. Thanks for explaining the flavoring sauces Wil. It helps to get the right balance when throwing together a "clean out the fridge" dinner.

This is the fourth recipe from your channel that I've tried cooking and so far I have a success rate of 100%. Taking into account that just a few weeks ago the only thing I knew how to cook was plain steamed rice, I can say that I'm now beginning to cook with confidence!

Great recipe.. made it tonight. Didn't have any mushrooms so I diced some Chinese eggplant (brushed it with your delicious chilli oil that I made from one of your other recipes) cooked it in my air fryer at 400F x 5 min) then used the eggplant as a substitute. Delectable! thanks, Yeung man!

I’ve decided that broccolini must be your favorite vegetable-it shows up in a lot of your recipes. 😁 I really appreciate the fact that a lot of your recipes accommodate different vegetables. I recently used baby bok choi and red peppers in one and it was delicious!

Thank you so much! I'm currently pregnant and got an intense craving for stir fry noodles. I did sub the soy sauce for low sodium tamari and it was still plenty salty. If you are sensitive to salt (as my husband is), I'd recommend replacing some or all of the soy sauce with coconut aminos. Overall though better than anything I could've ordered.

My partner and I are sliding back into vegetarian world. I found your channel yesterday, ran to the store to buy all the ingredients for your hot and sour noodle soup with fried chili sauce. I love sriracha in my stir fry sauce usually with soy sauce,hoison sauce,sesame oil and maple syrup love the spice kick u get from the sirarcha 😋

You will find bottled "mushroom sauce" as common vegetarian oyster sauce alternative, in most Oriental stores.

I don't have sriracha, so substitute with Laoganma crispy hot chilli oil for a real spicy kick. Delish!

Question: why are the garlic cloves chopped and not crushed? I have a garlic crusher and it saves so much time as opposed to chopping. Does it affect the flavour somehow?

Love the recipes, but why so much sodium? Dark soy sauce is so high in sodium

Different brands of soy sauce (whether light or dark) tend to have variations in salt concentrates. Also taste preference is subjective. As one who prefers lower salt intake myself, I find just as easy to adjust sauce mix accordingly..

Wil, you’re simply the BEST inspiration for EASY and HEALTHY meals. This one looks so delicious. With such simple ingredients I always have on hand, it’s definitely on my menu for tomorrow. I never enjoyed cooking until I became vegan 15 years ago. Now every meal is a real pleasure. Thank you for spreading the joy!!!

Sadly this Sriracha sauce brand (Huy-Fong Foods) isn't vegan, they stated publicly they use bone-charred sugar in their recipe. Otherwise great recipe!

@@YEUNGMANCOOKING The issue with bone-char filtrated sugars is that there is no transparency requirements about it. So while some brands will be transparent about it, most will just write down "sugar" in the ingredients and call it a day. Cane sugar, if whitened, has most likely gone through bone char filtering. However beet sugar never does. The only way to somewhat know is to know what the sugar manufacturing habits of the country where a product is manufactured are. For instance in France the great majority of refined sugar is beet sugar. In other parts of the world I wouldn't know for sure however.

2nd time looking at this delicious yummy Noodles actually its my first look at your cooking .sometimes my body feel to eat just that simple touch so am sure going to try it ,the only thing not fimiliar with is the sauces here in the catibbean but i' try .😉☺

Also do u think u could do a video explaining the diff and variations between Umami, miso- red and white, soy sauce- dark, light, regular, tamari, white rice vinegar, black rice vinegar, msg, all the diff common noodles - udon, soba, drunken noodles, glass noodles etc etc Just an explanation of the diff variations all in one video would be really nice 🙂
