They are definitely worth a try. Especially if you or one of your guests is eating low carb. Make sure you rinse them VERY well though, and don't smell them. They smell strongly of fish for some reason, even though there's no fish in them at all.

This is a super recipe, thank you so much! Impossible to tell these are not regular rice noodles, and the black vinegar removes any lingering trace of fishiness after rinsing. Delicious, and a boon to dieting. Thank you!

I'm an older guy...ate under 500-cal a day for 3-weeks using isopure zero carb protein shakes with glucomannan powder to thicken it and make me feel feel full longer. Supplemented with beef liver 2x a week and daily vitamins. Dropped a LOT of weight and then began mindful eating 1,000-cal a day with under 15-grams carbs a day (chicken breast, fish and lamb) along with shirataki noodles and some veg like cabbage, mushrooms and spring onions. Introduced daily walking (amazon walking pad/treadmill) and dumbell exercises. I look and feel like my mid-30s again. Food is still tasty but doesn't rule my life and the light exercise fills a few hours of my day instead of sitting around being bored and unconsciously snacking. Hope that helps someone. ☺

I love these noodles because they're keto as well. Sometimes they have a funky smell, so after washing I combined them with half the soy sauce and set them aside for a few minutes. I also substituted allulose for the maple syrup and a little guar gum for the potato starch. This dish is delicious, thank you!
