I think it wasn't fastened properly. He probably didn't use plugs in the wall and the shelf must've hung forwards slightly. So, if you have screws that are in plaster or something similar, without extra support, and you constantly have this weight and more weight put on and taken off, so the shelf moves, your screws will start to loosen. That's what I think happened. They started to scrape away the material and eventually gave away.

If a properly built house can stand for centuries, a properly built wine wall should do the same. If you put enough work into just about any load-bearing structure it will stand until the materials rot.
