I love this soup, however I'm allergic to tomatoes. Is it still a decent soup without the tomatoes? What would I add in in place of the tomato? Thanks!

It will still be delicious, but you will most likely need to add more liquid to replace the crushed tomato sauce. Your favorite stock or broth will do nicely, I think. *Edited to add that I wonder if a pumpkin puree would go well in the place of tomato (I have issues with tomato based dishes, nowadays also).

Love it I always add to my minestrone soup about 1/2 cup of ditalini or tubettini to almost all my soups just yummy & a complete meal. 🧹🥰
