Ryan, one of the best things I like about your video is you actually store and prepare your food in your van. I’m so intrigued by van life, but out of all the videos I’ve seen, very few van lifers actually show us this aspect of it. One day, I hope to buy a van of my own and hit the open road!

What a strange coincidence, I just made potato leek soup earlier today and now when I sit down to watch your latest video I see you making the exact same dish :) I usually use a little bit more heavy cream and I also add a dash of dijon mustard which really adds to the flavours. Great content as always!

Immersion blender tip: you want it to be more submerged to avoid mess and also to get a bit of a flow going as the blades suck up and push out through the sides. Van Life friendly version: try tilting your pan so you can submerge the blender more in the deep end if you'd rather not dirty another taller/ narrower container

Ryan, always remember when your using Leeks..when and if you slit the Leeks in half, you need to rinse the leeks in a bowl etc in water as there’s sandy grit in between the leeks. Rinse at least 2 times, before putting together your leek soup. No one wants to eat gritty sandy Leek soup.

When we make this soup.....we fry some bacon in the pan....set aside to chop for garnish, strain the grease and add grease back to pan, add butter (lots of butter) and then fry the leeks. That might have been the extra flavor you were looking for. (strain the grease so the burnt bits are not floating around in the soup)

Leek & Potato soup, especially home made is my absolute favourite too, I love batch cooking it and then having it for days! Such a simple recipe that I use but it is the best. I used to make it without the salt, then wonder why it was not that great! Best way is butter to saute and adding the salt, foolproof it always comes out good. Also I watch a few of these channels but your van is the one I would want to live in, keep the videos coming.

It's a bit posh but a serious water saver-get one of those Fisher and Paykal drawer dishwashers. You'll save tons of water and not have to look at the dirty dishes. One load only uses 1.8 gallons for 7 place settings. I'm building out a bus and I can't afford not to have one. Just washing one place setting by hand uses more water than this little unit does.

Try flying J’s, I know at least in the past and on the west coast they have dump stations for RV’s if they do then they should have a hose right there as well, to use, you have to pay to dump not sure about the water its usually just a standard hose spigot, and have never been behind any type of gate/locked at all.

I'm literally cooking up a pot of potatoe soup too!! I always chop up a ham steak in mine. Also tip for those who don't have a blender is to dump some instant potatoes into the broth. It adds the same texture and bonus you still have the cooked potatoe chunks for a hardier soup. Today I also dumped some left over mashed butternut squash and a dash of hot curry to spice it up 😁

Also look up Mayo biscuits. It the quickest easiest bread to make. It pours like pancake batter. I cup self rising flour 1 cup whole milk 1/4 cup mayonnaise. Whisk together. Pour into cup cake pan. Bake at 425F for 15 minutes. Makes 6 Note don't forget to spray your pan.
