Winter Veg Crumble | VEG HACKS

Everyone is familiar with the idea of a sweet crumble, but savoury crumbles are wonderful too. There is something so comforting and homely about vegetables in creamy, cheesy sauce covered with a crunchy crumble topping. This is a really adaptable recipe which works well with most vegetables, so use whatever you have to hand.

Ras el hanout is a ready made middle-eastern spice mix which could work. Otherwise, ½ tsp each of cumin & coriander, plus a pinch of cinnamon, or even a good tsp of curry powder.

Great idea, but I'm not sure how you actually cook the veg in that Le Creuset pan (other cast iron pans are available...) - you don't actually say, and in the recipe link above, it only refers to boiling the parsnips, not the other veg... Could you elucidate?

The root veg are pre-boiled, but the kale and celeriac don't need to be, so James just mixes them in with the sauce, and they cook during the oven time.
