That's what I've been discovering rereading the books. I can tell when I started uni and only flew through the books once instead of reading them multiple times. So much I forgot about the later books that I am just now rereading for the first time. The magic will always be there, don't worry about that. Just pick your favorite up and enjoy the ride :D

I feel like I would never get through all the Discworld books (I’m not a huge series person), but I want to try the first book someday just to give it a taste.

The good thing about the discworld books is that you can read most of them as standalones, or just focus on the subseries. I wouldn't recommend the first to give it a taste though. Partly as the firt two books are one story and the writing doesn't appeal to a lot of people who try them now. It changes throughout the books. As one of the standalones I always liked Small Gods.
