You have to replace the file. Otherwise it can't be overwritten with the new amount that you have chosen.

I have only tried this on PC. If the save data is transfered to your Steam Deck it still should work.

I haven't made this video to fool people who have a xbox but to help the ones having the game Wobbly Life. You are right. I have a PC and i know it can be expensive but i also have a PS5. If i ever find out how to do this on a PS5 or if i find out how to rewrite files on a xbox i will make a video about it. But i'm not responsible for the fact that you have a xbox and i own a PC. No, but there is a mod called AzzaMod where you can unlock all items at once. But i'm not sure if this works only with the premium version which has to be paid. I only tried the free version long time ago.
