Very top class story telling, camera work and sound. Loved seeing and hearing about life in the valley. Wonderful family. From an older woman living near the South Pole in New Zealand. I just do armchair travel now.

i always find it smoewhat annoying when people simplify things like - we cure mutton and eat it carpaccio. curing meat has been done around the planet everywhere, not only in italy and spain. remember the cheviche? we have that in estonia as well, we call it äkis, it has been made for hundrerds or thousands of years, old recepie says you use fatty fish in the late season and Vaccinium vitis-idaea as the source of sour, but lemon is better, which modern version uses. You cut the fish up in the boat to small cubes, on the way to the shore and mix it with lemon, onion, salt and oil. some people use chillies and pepper, but thats not needed. it takes about 20 minutes and then its ready, by the time you get to the shore, youll have kids waiting with an open fire and roasting brean on fire to eat it with. heavenly.

It's a point of reference. If people say 'it is like carpaccio,' we know exactly what they mean. If someone said 'It is like akis' I would not have a clue. Sorry and all that. Would You know what an Arbroath smokie is? It is not meant to put cultures down, or claim one is superior to another. It is to help people understand better.
