Well, the game they come from is called "Samurai Spirits" in Japanese. As in, the spirit of samurai, not actual samurai. But the name was changed to "Samurai Shodown" outside Japan. So to make things simpler, the KoF team was named "Team Samurai" rather than Team Samurai Spirits or Team Samurai Shodown.
