That is the normal amount of chilies, or bird-eye chilies used in our sambal belacan in SEA. I know that your chili sauce is good just by watching this. But if you add some garlic, tamarind juice (not much since you already use lots of tomatoes) and most importantly, shrimp paste (belacan), it will be the most awesome sambal belacan or condiment that you'll ever taste! Of course, we don't take just the essence, we eat all of the chilies! XD

Here in India we make the such dips for barbeque using Bhut Jholokia / Ghost Chili and few other ingredients like fresh - garlic, ginger, coriander, mint leaves, onion, lemon juice + salt, zeera, dry roasted carom seeds. However we don't cook them...just grind them into a fine fresh paste/ chutney.
