It is due to one of the many food preservation techniques known as aseptic packaging and processing. The food is firstly freeze dried i.e moisture is removed without application of heat through sublimation (freezing the water present in food and then directly turning that frozen water into vapour without undergoing the liquid phase through pressure reduction). Since moisture in food is the most prominent cause of spoilage, so this freeze driying process practically removes that mositure from food, hence enhancing its shelf life. Next, the aspetically processed food is aseptically packaged in a specialized packaging material that doesn't allow any moisture to enter or even microbial contamination. So, in conclusion, it is simply making the food microorganism free and then packaging in microbial free environment. This is how it can be stored without use of any preservatives.
