WOW Saddles - Headplate Fitting

Hi, I have a high withered throughbred and the wow saddle pinches his wither. You say "there is no way we could put a uu headplate on a horse like this" and that is what wow are suggesting... would it make the saddle sit lower? He does seem to have a wide spinal process at the withers. It would be great if you could do a similar video with panels! (Tab type horse verses no tab for example)

I'm confused as to why the chunky horse you fit the headplate on to him quite snuggly and the warm blood you are waving it around above him. My welsh seems to be requiring something less than the 2 he's currently in and I'm completely confused as he used to be in a 5, it seems like an impossible difference.

would both these horses be in a curved Y bar seat?
