播主,谢谢你的分享。我是个超级MeePok痴。所以这一集我超喜欢的。 你介绍的除了第二家“阿林”之外,我全部都吃过。不过我的个人首选是第一家的“老林”。他也是我每次回新加坡必吃的MeePok。或许他家的口味和我小时候记忆中的MeePok是最接近的原因吧…… 在那个通讯不很发达的年代,最好吃的MeePok永远都是离自己家不会太远的那档。😆 其实新加坡的MeePok是非常典型和完完全全属于这个狮城小岛独有的饮食文化。大致上可以分成有放醋(福建人的肉脞面)和不放醋(或很少 - 潮州人的鱼圆面)。老林的是偏后者,所以喜欢吃醋味比较浓的人一般不会喜欢。但喜欢吃潮州鱼圆面(比如我)的人就喜欢这样的口味。拿米其林一星的大华是偏福建肉脞面型的,所以喜欢吃醋味较浓的朋友一般都会很喜欢。但两者之间,我还是选择没有米其林星的老林。 那个Tee Poh是潮州话的“铁脯”意思,也就比目鱼干或你说的干扁鱼干,也叫大地鱼干。 阿和的面吃得出他的用心,是不错吃,但吃惯传统口味的人未必会喜欢,而且可能还会嫌他做得有点太奢华,毕竟MeePok是属于吃粗饱的平民小吃。阿和日本徒弟的那家栗原我吃过后的看法和你们一样,也觉得日本叉烧和MeePok并不搭。 如果你的美女朋友Catherine也是MeePok爱好者的话,那我建议她上网在谷歌搜索“Best Bak Chor Mee in Singapore: After Eating 48 Bowls!”这篇文章。里面的推荐清单我吃过好几家,觉得他的推荐还蛮准确的。

So happy you made a video on BCM. My first BCM was at Food Republic @ Capitol Singapore, because it was close to my hotel. I thought it was not any inferior to 大華's. 大華 was a bit hard to find. I thought it was located in North Bridge Road Market. I walked around for some times and I almost gave up looking for it. I am glad I didn't. Once I arrived, I was happy to see there were only a few people ahead of me and I didn't wait too long. Love the noodles and I hope I can go back soon and try your places.

Try Lai Heng Bak Chor Mee at Toa Payoh Lor 4. Also very good !
You must try Macpherson Minced pok noodle at Marsiling. His soup is very rich in favour. And he also served very tasty 猪脚面线. Both of you should be familiar with this dish.

Bak chor mee my favorite. Go to breadtalk building at Paya Lebar republic food court try the teochew fish ball noodle....吃白的。。。just pork lard and oil and some cut chilli...and Chong Pang market the teochew bak chor mee.

Alison, 您好。我现在是在中国福建看你这个节目。Bak Chor Mee 是我每次回新加坡必吃的美食,是新加坡非常独特的美食。咖啡店和Hawker Center 的 Bak Chor Mee,基本上会比 Food Court 的好吃。你可以试一下干的“排骨虾面”,特别是那些能做非常好吃的辣椒的那一种,辣椒越多越好吃。新加坡的“排骨虾面”也是新加坡特色美食但不是很多人介绍。

謝謝Ali! BCM也是我每次去新加坡一定最少都要吃一次的美食!這次妳跟Catherine介紹的那五家店我也沒有去過!🤣🤣 原因是我第一次吃的那間BCM是在Hong Lim Hawker Centre 裡面的「大華」,吃過一次之後就上癮!🤣🤣 所以沒有再去找別的!不過,我吃的那家「大華」好像跟妳介紹第三家「大華」BCM的賣相好像差不多!我下次會去試一下!😎😎
i agree with both, i have tried the first stall my fren brought me, but i didnt find it any special, not sure what's the hype about. it wouldnt even make it to my top 10

Jalan Tua Kong的阿林Mee Pok在一间名为“小而大”的咖啡店。查一下Google map可以找到。如果是打公共交通,可以搭10号巴士从Simpan Bedok直接到哪儿。 我记忆里的BCM是没有醋的或者醋并不是重点。只有吃“鱼丸面”,黑醋才是重点。 传统的BCM里面的配料有瘦肉,猪肝,猪油渣,肉碎。没有现在的那些鱼丸,肉丸,鱼饼之类的。主要的配料是肉碎,因为肉碎的福建话就是“bak chou”。不过因为时代的发展,现在的BCM改变很大。也是那些对自己行业的专业坚持和因为猪瘟引起的猪肉短缺所做的改变。 如果吃乾面的话,建议试试吃粿条或汤的“老鼠粉”。执着的业者,一定要在面的不同煮法上下功夫去呈现不同面类的口感。另外辣椒酱也是BCM好吃的一个重要因素。瘦肉的质感和口感,肉碎的嚼劲,猪肝的粉嫩,都是该注意的。

如果是干面,我会选择第二家Ah Lim Mee Pok. 汤面如果喜欢重口味,下次可以试试在New Upper Changi Road的58 肉脞面。一定要试试他们家的馄饨,保证你们会喜欢。

What about fishball noodles. I remember I like the teochew fishball beehoon soup at wiseng food place managed by old couple. Haven't been there for a long time. The hillstreet pork noodles is always my no.1 meepok stall. 😁 Also long time never visit. You makes me wanna visit them and eat from the stalls again. 😆
