I assigned item to project but it does not appear on project when I go back and check 🤔

What if you are not assigning the full value just a portion of the product, does Xero allow that?

How do you add an existing bill to a project?

I assigned expense from bill but it does not show on unassigned expense 😃

Strange - I am pretty sure I did this correctly in Demo company but expense does not show up in the Project

How do I assign an expense that is NOT billable, but I still want to see it as an expense on the project? (For example, if the cost was figured into the invoice amount, but not line itemed out)

On the Tasks & expenses tab, at the top right click Add, then select Estimated expense or Expense. Give the expense a name, or start typing to select an existing expense item from your Xero inventory.

I wish this was better integrated with hubdoc, I'm giving projects a show, but this part of it is so slow... one at a time, categorising multiple recent expenses into projects...

I thought that at first, the UI is really slow and unintuitive. You have to tick the box, click the "Assign" button (to the right of the project name), and then click the "ok" button.
