On my last night in Xinjiang, I went to Hotan Night Market, one of Hotan’s most popular nighttime eating spots for locals and tourists alike. Of course, I ended up buying quite a lot of food! And of course, I ate it all. (And of course, I am now quite a bit heavier than I was before I went to Xinjiang)

The wonderful thing about the food is that there's hardly any factory food. Most of it is made at home or on the spot with meat fresh from the butchers and produce from market gardeners. Most western fast foods use processed meat from factories and factory pre-washed salads, etc. In Asia, even the chilli sauce is likely to be freshly made by the food vendor.
