The most important in the curry taste good is the fully cooking of the curry powder as well as the curry must be balance with the food. The broth or gravy in the curry must be smooth but I can tell most of the curry in Ipoh only put a lot of curry powder but not fully cook. Many stalls just cook it with over put too much curry powder. If you really realize after finished the noodles and your mouth will full of the curry powder which is not cook well. 1. Curry need time to cook. Small heat. However, many hawkers/stalls here use high heat n cook it fast. Next time b4 you put into your mouth, do check did the curry broth or gravy contains carbon. The black dot in your noodle. I can tell 90% famous curry noodle house in Ipoh give u free this carbons. 2. Curry powder not fully cook till smooth. Mostly full of curry powder in your mouth after eating because too much curry powder putting inside. Curry taste should balance in a curry food. However, I know many eater just like strong curry taste, so just put a lot curry powder will taste good but this is not the right way. 3. Too much salt. The curry noodles in Ipoh, mostly is very salty. Why? Too much salt inside. 4. Price expensive with tiny portion. If the above you can meet, you can be famous too.
