芋頭棉花雞
Steamed Chicken with Fish Maw, Taro & Mushrooms🥘An Absolutely Scrumptious Dish & Homemade Dim Sum👍
材料:
急凍雞扒2塊
芋頭(約12兩)1件
冬菇(細)8隻
魚肚1兩
舊1舊
蔥
處理:
1. 冬菇,清水浸軟。
2. 雞扒,清水解凍。
3. 大火煲滾1鑊水,放魚肚,加入米酒1湯匙及粗鹽半茶匙,除去腥味,灼至軟身,轉中慢火,煲15分鐘。
4. 芋頭,去皮,切薄片。
5. 雞扒已解凍,倒去水分,加入粗鹽1茶匙乸10分鐘,除去雪味、腥味,及加入少許鹹味。清水沖洗乾淨,擎乾水,用廚紙索乾。
6. 雞扒,去皮,除去脂肪,切一舊舊。
7. 薑,去皮,磨成蓉。
8. 加入少量薑片在雞扒內。
9. 雞肉,加入調味料:
a. 鮑魚汁1湯匙
b. 糖半茶匙,撈勻。
c. 生粉1湯匙,撈勻。
加入冬菇,撈勻。
10. 魚肚已灼至軟身,清水沖洗乾淨。
11. 魚肚,切一塊塊,清水沖洗乾淨。
12. 芋頭,放玻璃盤內,放上:
a. 魚肚
b. 雞扒
c. 冬菇
烹調:
1. 大火煲滾1鑊水。
2. 大火蒸雞15分鐘或以上。
3. 蒸好,灑上蔥粒。
4. 完成,可享用。
Steam chicken steak with taro and fish maw
Ingredients:
Frozen chicken steak 2 pcs
Taro(about 12 taels)1 No.
Mushrooms (small) 8 Nos.
Fish maw 1 tael
Ginger 1 No.
Green onion
Preparation:
1. Mushrooms, soak in tap water until it turns soft.
2. Chicken steak, defrost in tap water.
3. Heat up a wok of water. Put fish maw in wok, add in rice wine 1 tbsp and cooking salt 0.5 tsp to remove unpleasant smells. Soak until it turns soft. Turn to medium~low flame and boil for 15 minutes.
4. Taro, get it peeled. Thinly slice.
5. Chicken steak has been defrosted, pour away water. Add in cooking salt 1 tsp, season for 10 minutes to remove unpleasant smells and add some salty tastes to it. Rinse thoroughly. Drain. Dry with kitchen towels.
6. Chicken steak, remove its skin and fat. Cut in pieces.
7. Ginger, get it peeled and grinded.
8. Put some ginger slices in chicken.
9. Chicken, add seasoning:
a. Abalone sauce 1 tbsp
b. Sugar 0.5 tsp, mix well.
c. Tapioca starch 1 tbsp, mix well.
Add in mushrooms, mix well.
10. Fish maw has been softly soaked, rinse thoroughly.
11. Fish maw, cut in pieces,. Rinse thoroughly.
12. Taro, put on plate. Put in order on top of it:
a. Fish maw
b. Chicken steak
c. Mushrooms
Steps:
1. Heat up a wok of water at high flame.
2. Steam the chicken at high flame for 15 minutes or more.
3. Steam well. Put green onion cubes on top.
4. Complete. Serve.
