I used to make duck confit which you need to brown it first before cooking it in the oven. I like you method of pouring hot duck oil on it during cooking. No need to clean up the stove. I live in Los Angeles and it is expensive to just buy the duck leg and thigh together. Whole ducks arewildly available in Chinese markets.
