See even Middle Easterners "clean" their chicken by boiling and "washing" it. Caribbean folks "wash" our chicken too with vinegar water or lemon & water. Food looked great by the way.

I'm Moroccan and It's crazy how similar the cuisine is , we also get rid of the chicken smell , but we soak the chicken in vinegar lemons water and ginger .

So we Egyptian’s have a secret way of getting the smell out of the chicken with out cooking it. You take the chicken and take fresh lemon and kosher salt squeeze the whole lemon or lemons depending on how much chicken you have then take kosher salt like 1/3 5 tablespoons again depending on how much chicken you got going and put it on the chicken rub it /mix it together and let it sit like that for 15 minutes or so than wash the chicken and tadaaa all the smell is gone chicken is clean and ready to be cooked.

We do that too mostly for fish, but boiling chicken is not only for removing the smell it's said that they contain hormones and for cleaning it from them it's better to boil it first a little.

Wow coming across this made my heart so happy. My family lived in Columbus and went to Jeddo for probably 15 yrs before we moved to California. Have not found anywhere here with nearly as good kabob, rice or tadig! Please give mama kavari my salaam’s, and tell her Sonya misses her tadig!!

Ofarine!! Dasteh shomal Darde narconeh. Finally good quality persian food instructions!! I’m married to an irani, I lived in Iran for 6 months, I’ve met his whole family and to this day I’ve taught myself how to cook persian meals. His family hasn’t taught me anything and if I ask questions they just say i don’t know. I can make zeresht polo ba morgh, khoresteh gormeh sabzi, khoreshteh karafts, DZ, ab ghoosht, loobia polo, khoreshteh bamieh, jujeh kabob, kabob koobideh, adasi, adas polo, mast o musir, mast o khiar, fesenjoon, shirazi salad. I can cook almost all of it. This is the first time I’m watching something that explains why it’s this way. Like the tadig tip blew my mind. I can never get it right and no one gives me answers, just na medunam. The next cooking with Maman can you please make sweet fesenjoon. Mine always comes out sour, which isn’t a problem because everyone has their preferences, but I love the sweet one better and can’t make it.

No need to boil chicken it takes all the moist out of it and its watery when you cook it , you might soak it in salted water and rub it with slices of lemon and ginger powder, it works perfectly for a whole chicken as well and leaves a nice smell, that's how moroccans cleans fresh chicken before storing it in the freezer.

I never cooked in my life specially Persian foods, my mum just never was interested to show me anything, but this video really demonstrated how to cook authentic persian foods I love how simple you explaining it and you also share grandmother tales ams tips ,like why you should soak your rice in salt water or how to get rid of the chicken smell by boiling it first ..this is gold. Thank you so much! Now I can cook my favourite food. ❤ A question though can I use rapeseed oil instead of animal ghee? I'd like to keep it still quite healthy idk if that is possible with Persian foods 😅 I do remember my grandma did switch to rapeseed oil to make it healthier.

Hey! Great video 👍 just a tip from a chef! Always wash ur vegetables and fruits, reason being that a lot of non organic stuff ( and even some organic veggies and fruits) are sprayed with heavy chemicals to keep bugs and stuff away so be sure to wash it in hot water! 😁👍 Be safe and have a great weekend everybody

Yas, I loved this! I made it for dinner today, didn’t have the saffron or bread/potatoes though so I just made it without the saffron (still delish!) and used a tortilla as the bread under the rice 🙈 ITS STILL SO GOOD!
