Something I like to do is custom superflat worlds, custom for ores n shit but only having the single biome can make it challenging, my favorite biome to use for this is the desert biome because no trees so you would have to use a wandering trader for trees and another food source other than meat that wouldn’t drain your emerald supply that you worked hard for by harvesting crops or by punching things to death.

In 1.17 you can only get moss and loads of the other lush caves things by wandering traders, I found one who was selling moss but at the time I didn't have any emeralds on me. I haven't seen any moss since and that was on tuesday
