Yemas de Santa Teresa - Typical recipe from Spain
Recipe on how to make traditional and traditional egg yolks from Santa Teresa, egg yolks or yolks from Avila, a very old recipe created by the nuns of the Spanish city Avila, which is made with only 3 ingredients.

For this recipe we have used 3 ingredients and optionally you can add any of the following aromatics:
Clove, star anise, cinnamon stick, lemon or orange peel, vanilla branch or liquid ...
The ingredients used for 18 yolks:
5 or 6 chicken eggs (better if they are from field chickens)
1/2 cup of sugar that is 90 grams
1/4 cup of water that is 50 ml
and to aromatize we have added a piece of cinnamon stick .. but I remind you that this is optional, the original ones are made without aromatizing to better feel the great taste of the free range eggs.
