Yogurt and Tomato Meze

500 grams of cherry tomatoes
1 small onion (or red onion)
1 teaspoon of pepper paste
6-7 cloves of garlic
1 teaspoon of salt
Half a teacup of olive oil
1 bowl of strained yogurt
1 bowl of regular yogurt
Some grated lemon zest
A few sprigs of parsley
1 teaspoon of thyme
Half a teaspoon of black pepper

1. Wash 500 grams of cherry tomatoes and cut them in half. You can leave the smaller ones whole.
2. Place the tomatoes in a medium-sized glass baking dish.
3. Slice the small onion into half-moon shapes and sprinkle it over the tomatoes. Red onion will add extra flavor.
4. Add a teaspoon of pepper paste to the center of the tomatoes. Add 6-7 cloves of garlic on top.
5. Sprinkle about a teaspoon of salt and half a teacup of olive oil over the mixture. You can adjust the olive oil to your liking.
6. Bake in a preheated oven at 180 degrees for 35-40 minutes.
7. While baking, mix a bowl of strained yogurt and a bowl of regular yogurt in a mixing bowl. Add grated lemon zest, finely chopped parsley, and half a teaspoon of salt, and mix well.
8. Once the tomato mixture is done, add thyme and black pepper. Mash the garlic and pepper paste together with a fork.
9. Pour the yogurt sauce over the tomato mixture, sprinkle some parsley on top, and serve.
