Today I went to my friend's office to cook lunch for them!
This is the first time making this dish so I was very nervous but I prepared very hard for it. The chance of failing is very high so I was very worried but I think it came out very well..
Dalzim has a BBQ Skewer shop in Hanam and he also runs an online market Potato shop. He's come out in two consecutive videos and he is the boss of both so many people may be confused so I am letting you know here beforehand.
If you use sous vide I thought that the chance of succeeding a Beef wellington would be high, and after this test I confirmed it. The risk of losing too much moisture is fixed by using sous vide.
Making sure the internal temperature stays at 58 degrees, you can stay within the safe range of 52 to 60 degrees. So you can turn the temperature on the oven down as the outside starts to brown nicely and you just have to wait for the internal temp to rise.
Of course if you do it the traditional way it will probably be much tastier, but I am not a professional so I need to be as safe as possible. Sous vide let's me do that safely.
Sous vide isn't some secret trick that makes everything tasty. But it let's you control a lot of variable in the dish and is a way to cook dishes a bit more easily.
