I’ll be at work, see one of Chris’s vids & go get a couple of dogs for lunch. Mustard, Sauerkraut, Onions. It is the way. I ordered some Sabrett onions on Amazon, because I had to try them. Onions where I live is diced raw white onion. The Sabrett was a different taste. Sweeter than I thought they’d be. Good none the less.

I'm German, have eaten my share of sauerkraut. I can tell you the darker sauerkraut is better. It means it has been cooked and seasoned. Most cart vendor sauerkraut looks just warmed up.

Chris - The first two dogs with the carmelized onions did they have tomato sauce/ketchup in the onion sauce like the traditional NYC onion red sauce that you had on dog #3? So the stand on East 70th and York I’ve been going to for about 30 years definitely one of the best and most reliable hotdog cards in the city. Also remember that area has a lot of repeat lunch crowds with all the hospitals there those people will be looking to return to quality places for food
