My syrup is a lot darker and the starting sap was just as light as yours...and unless you checked your sugar content you may need to reduce it a little more...carefully. This is my second year of doing this and frankly am blown away at the results...who knew.

I am in process now for our second year of making syrup and will be cooking this weekend. I invested a little more in better equipment this year including buying a hydrometer so I can get it just right. I tapped 35 trees this year.

@@FromScratchRanch fantastic... unfortunately my tree options are limited,. Luckily I have great neighbors... which resulted in about 18 trees. Last year it was just an experiment I had to see for myself...those damn KZbin videos...and I started late, but the results were encouraging. This year's total was just under 2 quarts...but very tasty at about 66-68 percent sugar.

How many days did it take before you collected the Walnut Sap?

I am in process now for my second year and a bigger operation since it proved to be so good last year in my test. I have 35 trees now tapped this year and will be cooking this weekend. It doesn't take long to get some sap. Some days I get 1 to 2 gallons of sap in a day per tree from the older and bigger trees. Once you tap the tree and if the time and air temps are right, you will get sap right away. I also sometimes collect every day, especially on the warmer days. I do not want it spoiling so I collect it and put it in a deep freezer until I can cook it all at once.

I have a bunch of black walnut trees as well and the nuts are great! I really like them. The challenge is opening them as it’s one of the toughest shells! Do your research on how to crack them open

I can tell you right now it’s not reduced enough. Flows too easily.
