NOKUL is a type of pastry made from yeast dough. A distinctive feature is that it is made in the form of a roll and for the fact that you do not have to wait for the dough to rise. Nokul is cooked differently in different regions of Turkey. It is usually filled with walnuts, hazelnuts and grapes. Also it can be cooked with tahini and poppy.
INGREDIENTS:
- Egg (separate the yolk)
- Water (1/2 glass)
- Yoghurt (2 tablespoons)
- Sunflower oil (2 tablespoons)
- Sugar (1 tablespoon)
- Butter (2 tablespoons, melted)
- Dry yeast (1 tablespoon)
- Flour (3-4 cups)
Filling:
- Sugar (half a glass)
- raisins (1 cup)
- Walnuts (1 cup coarsely ground walnuts)
HOW TO COOK?
1) In a deep bowl, mix egg white, yogurt, water, sugar, sunflower oil, melted butter and dry yeast. Add flour and knead into a soft, non-sticky dough. Leave for 10 minutes to let the dough rest.
2) In a separate bowl mix walnuts, sugar and raisins.
3) Divide the dough into four parts. Roll out into a square shape (and the thinner you roll out the dough, the crispier the buns will be). Sprinkle the filling on all sides and roll up. Cut the roll into slices two fingers thick and place on a baking sheet.
4) Brush with egg yolk and sprinkle with sesame seeds if desired.
5) Bake them in an oven preheated to 190 degrees until golden brown.
