Probably to stay true to the original manga - though of course, the reasons may vary from scene to scene. That’s not to say 100% of Kai is more like the manga, but in general it is. That’s not to say it’s better than the original either, everyone has their own preference

Honestly it depends on the scene. DBZ did this scene better, while DBZ Kai did Vegeta's sacrifice better. It just depends on the scene. I like both of them, although I have my preference, like Gohan in DBZ and Frieza in Kai.
