You can put a small pan of hot boiling water in the bottom of oven to speed up the rising process aswell if your oven has no light the steam will help it rise

I will definitely make this recipe for my husband, a question, can you use a sugar substitute such as Stevia, allulose or monk fruit to the yeast mixture? I’ve asked this question to several people and no one knows.

Yes, you don't need to proof it before, just through everything in together.
