Looks way to spicy for me, so I'll pass on it. I do make my own chili and make enough for two meals, since I use my little crock pot and let it cook for 5 to 6 hours. I love eating it was shredded cheese and some sour cream. Last batch I did make with ground beef and tomorrow I will be having the second one I took out of the freezer for lunch tomorrow (Monday) I do enjoy watching Atlanta cooking. I'm looking forward to all the recipes she does on this channel and her own.

a nice, spicy chili can really grab ya by the boo-boo. but remember that chili has a LOT of forms and flavor profiles. it's said that chili was created by San Antonio *_"Chili Queens"_* that would roam the streets selling chili and whatnot. (sometimes more whatnot than chili.)

Ya, there’s the typical canned Hormel chili. Which my family calls “White Person Chili” (my stepmom makes homemade that’s really great in a cold night) which is the classic type that people put crackers in, on top of hotdogs, or can be more of a soup. Some think chili has to be hot but I find the best is more the chili used as a spice and it being savory. We make “Red chili” that’s made by cooking hamburger, then adding a little bit of flower to brown and making a starter almost like you would a gravy, then adding kitchen bouquet chicken 2 bouillon cubes, [Fernandez brand] red chilies ground into a powder (not the typical chili powder seasoning), a bit of water slowly at a time to add volume to the rue but making sure it’s not too thick, but not watery. I like adding Fritos and Cheese, but my family likes to add the normal toppings. It can also be made that way with pork. Then “Chili Beans” which is made with pinto beans cooked in a pressure cooker, then adding it to the chili from above. We also make green chili with pork using roasted chili we buy by the bushel. My mouth is watering just thinking about it haha

American here, we call the seeds coriander and the plant is cilantro

Coriander is from the French by way of England. But they mostly used just the seeds. Cilantro comes from the Spanish word for coriander by way of Mexico. I've read that in a few parts of Spain they use both words, one for the seeds and the other for the leaves.

Great job, as always! Pro chef tip: chop and/or measure out all your ingredients before you start cooking. It's called mise en place, meaning putting everything in its place. It will make your cook more efficient, more organized and much cleaner. :) Also, ALWAYS taste your food. Then you do not need to wonder if it's too spicy, too salty, needs salt, etc etc, and you can problem solve if necessary.

Just a hint: when eating hot spicy food use milk. Water just spreads it around the mouth where as the milk fats bind to the capsacin which is what causes the burning and pulls it off the tongue and mouth. And if no milk or do not use it then bread will work as well. You want to soak up the capsacin and heat.

There are levels. cinnamon candy hot / tongue burning -- water cayenne pepper hot / throat burn, coughing -- milk or cheese habanero / nose running -- bread, tortillas, etc. distilled hot sauce / sinus headache -- white rice and several hours

TX native & have made chili for yrs. The key is the type of chilis you use. I have always used chili powder blends, I mix my own from different peppers, to control the heat. Most of these blends are not overly hot, just flavorful; use cayenne to bump up the heat. And I know alot of peo put cinnamon in theirs but I never use cinnamon or coffee; and I never put beans in my chili! There are 1000's of recipes for chili. But staples are the beef, the chilis, the stock & the long cook to break down the beef and infuse the flavors.

@@LindaC616 Yeah, people don't realize there's like 20 kinds...there's Poblano, Blanco, Verde, Guacamole, Oaxaca, one that has crushed almonds in it...there are a LOT...Mole is just another word for sauce, coming from an indigenous language rather than the Spanish term "salsa".

As a 65-year-old Texan! First I want to thank you for doing chili! I have never heard of chili with coffee, but I have heard people putting chocolate in their chili! For competition chili! I never had tried it with chocolate! Most families will just use hamburger meat, but sometimes chunk meat like you did! Now you need to try a Frito pie! That is corn chips (Fritos in America) with chili, cheese and onions! I'm thinking one time y'all say you can't get Fritos! But I'm thinking of Doritos you had would work too! Great job on the chili! A quick hint on the heat level is that it looks like you used only chili's de arbol which are pretty spicy. If you can use a blend of guajillo, Chipotle, ancho, Pasilla etc to increase the complexity and reduce the heat. .keep playing around with whatever you can get in new Zealand to figure out what you like best.

You learned the hard way to be careful when adding chili peppers to in a hot pan. That is essentially what pepper spray is (don't worry it's a mistake we all tend to make a few times, myself included) 😂. Just use about half what you did this time, and I bet you will be making Texas Chili a lot. Cutting back on the peppers is perfectly fine, you still want a bit for the flavor but find the amount that you guys like.

I learned watching Gordon Ramsay, that you roll the pepper between your palms and it will break up the seeds inside of the peppers skin, you can then just pour out the seeds. That is if you do not want all or any of the seeds in your recipe. It is a very cool trick ❕

As a life-long (69 years) Texan, this was very interesting. I have never seen chili made this way. Most use ground beef or venison chili meat which is a little coarser. Also, people use a chili blend. (I use Morton’s, but I have made my own from chili peppers before) I’ve never known anyone to use coffee or cocoa powder. We call the leaves cilantro and the seeds coriander. Here is my husbands recipe 5 lbs ground beef 4TBSP Morton Chili Blend per lbs of ground beef 1 onion for every lbs of beef 2 cloves garlic for every lb of beef 2-3 cans Rotel Tomatoes per 5 lb Just enough beer to cover. I do a cardinal sin according to my husband because I put a little ketchup in my bowl of chili. The “rule” is no beans in Texas 🌶️. I’m not sure where that came from. Now I want to try this because I am so curious. It is not the traditional Texas Chili. 🫶🏻😊 Beer (not water) One of the main this is to simmer it for hours.

Atlanta, Pro tip! You can make your own Cornmeal by using popcorn kernels and grinding them up with a food processor or coffee grinder! Cornmeal isn't widely available in NZ but places like Ottimo Food Store do have it, and they may call it coarse corn maize. You can also substitute it with Polenta. The main difference between Cornmeal and Polenta is they type of corn used. Cornmeal is made from a field corn called Dent corn which is less sweet and starchier than sweet corn and if it's stone ground it has a coarser texture and richer flavor than steel ground cornmeal which uses steel rollers to make a finer grind and it removes the Germ and Bran making it more shelve stable. Polenta is made from Flint corn that is coarsely ground.

Bless your hearts for trying Texas chili. Real chili is quite a bit different, I hope you give that a try someday. In my chili, I use eye of round (or chuck roast), slow cooked in a crockpot and then shredded; ground chuck browned in a skillet; chili beans, diced onions, chopped green onions, minced garlic, tomato sauce, diced tomatoes, chili seasoning (either Watkins or Williams), and a little liquid smoke. It all goes in the crockpot to simmer on high for an hour, then low for another hour. The next time you're in Oklahoma, stop by and we'll make a batch. 😄

Atlanta-you did amazing! FYI-To make it more mild for your tastes you can cut the heat spices in 1/2 or 1/4 to make it tasty. Also for the heat drink milk or eat some flour tortilla as both help diminish the "heat" We also serve with sour cream and we personally drink milk with spicy foods..

I remember once. My mom made this huge pot of chili. And corn bread on the side which seemed odd. We crumbled the corn bread in to the chili. Man was that good. The cornbread absorbed much of the juice of the chili and really thickened it up. Was a great supper.

I do b-day dinners for my family and last year, my son-in-law asked for a ribeye, baked potato and grilled corn on the cob. I surprised him and did a coffee crusted grilled ribeye using espresso powder. It may sound weird & gross but it's his new favorite. My daughter's (his wife) b-day is 2 wks before his so we combine dinners. She wanted my maple glazed smoked salmon. We had a surf & turf night. I try to spoil my grandkids on birthdays and Christmas but I at least get my kids, son-in-laws and even my ex wife a birthday dinner, their choice of menu.

@@Sympathy_YT Which are similar to the ones at CB. The thing they didn’t like was the soft, chewy texture of the dumplins. All chicken and dumplins have soft dumplins because it is dough that isn’t fully baked. So their texture issue would remain the same regardless of recipe flavor.

I was surprised to find that chicken and dumplings can be different for different areas. Up in New York, I was raised on the big fluffy dumplings. When I moved to Tennessee, chicken and dumplings are also called chicken and slicks and have thick, puffy soft strip noodles instead of big fluffy dumplings. They're both good, but I prefer the big fluffy dumplings I grew up with. Big fluffy pillows of delicious flavor. Lol

The fresh chiles are a personal selection. Some are hotter some are not.. I do know you should run the sauce thru a fine mesh strainer. Other than that it looks awesome! We use dairy to coll things off. Sour cream or cheese and a near by glass of milk! AND Oh MY.. Water does not help it makes it worse. It spreads it round.... I have no idea who picked the state animal on that list.. but the state animal has been always "the mocking bird" and its illegal to kill one.

@@jameshobbs1460 the Mocking Bird is the state bird. There was/is a state mammal and tree (Pecan)…the legislature does a great job of passing bills to name this or that the “official Texas” item…that and making people members of the “Texas Navy” are among the few things they do efficiently.

Here is the recipe i think she used Dried guajillo chiles Dried arbol chiles Chipotles in adobo sauce Fresh jalapenos Olive oil Onions Garlic Beef stock Coffee Apple cider vinegar Dark brown sugar Cocoa powder A variety of spices, including cumin, smoked paprika, Mexican oregano, cayenne, coriander, cinnamon, cloves and allspice So it did call for coffee and cocoa

Comedy gold! I think this may be the best Atlanta cooking episodes, and I have seen (probably) all of them. I love how you leave in all the reactions, including the cook's! I've made the version with coffee & cocoa. It's a lot of work compared with "normal" chili, but delicious even if it is super-hot. Denz is correct: MILK is the antidote. Cheers to my favorite NZ family!

to cut down on the spicyness, you can use a chili that is lower on the scoville scale such as a jalepeno or you can add dairy (cream, butter, sour cream, etc.) or add something acidic (lemon, lime, vinegar, etc.) when cooking. As others have said taste as you go so you can adjust to get the balance you are looking for.

Taking your seeds out of the peppers under cool running water will reduce the "fumes" hence less coughing 😊 Also saute all the peppers in oil before before adding other ingredients. Take your time. The heat of the peppers will be greatly reduced and will give a bit of savory/sweetness instead of fire. 🤯 Great job, much love❣

Outstanding job, Atlanta. Depending on what part of the country you reside, those green leafy condiments are called either cilantro or coriander. BTW, an alternative to Doritos are Fritos corn chips. It may be called something else in NZ.

Texas here. Chili has been the main course for most of us out in the countryside. Also next time you come to Texas be sure to visit the Dublin bottling Co in Dublin. Texas has alot of things to visit.

Great job Atlanta ! I find it a little bit easier to take a small handful of chips and crunch them up to smaller pieces and mix all the broken pieces into the chili and I also sometimes (if too spicy) put a dollop of sour cream on top of the guacamole and some diced up tomatoes and some optional chopped iceberg lettuce if you want it may help with the spicy flavor depending on how much spice you put in. If it’s still too spicy then just cut the spicy ingredients in half next time you make it that should help.

Adding a dollop of sour cream in your bowl with your other toppings also helps cool down the spice.

One teaspoon of something does not change it to the whole pot it only alters the flavor profile mildly.(Coffee and cacao) Also you need to get used to eating spicy. Here in Texas we make sure that you taste the spice!! Unlike some other states where my friends say it's spicy and I can't taste a thing 😆😆😆. I have huge habanero bushes out back BTW 😆😆😆 I really enjoy your channel keep up the good work 👍👍

I’ve been actually growing my own shishito peppers which is fricking rare as it’s not exactly available very often in garden centers. Its maximum heat level is maybe 50 to 200 on the scale. Just a dry pan and heat to blister them. Also they are sweet as they literally don’t have much heat and if they do it’s like one in like 50 but you can’t tell until you taste it.
