so at 7:25 the left guy picks up the extra deck. Right guy sees this and Super Poly's. Is this legal? He had his chance to react but when he sees the left guy going into a monster in the extra deck, he's going to react.

It's technically a illegal play yes. The guy on the left should have asked if the opponent wanted to respond to the summon, if not, then priority is passed back to turn player, making super poly be unable to activate until another action is performed. That being said, it's super hard to enforce that irl, so it's a Grey area.
