For the two of us and to give away an overabundance, we only need about 3 cucumber plants, two okra plants, three 5 foot rows of successively planted green beans, about 6 tomatoes, etc. Successive planting is the best way to not let the crops get away from us and have less to go in the composter. FYI : Those large yellow cucumbers are great for making German Mustard Pickles called " Senfgurken ". I miss them, they were outstanding.

@@sissysimpson792 Note: You can cut into sticks or chunks: The old yellow cucumbers are better for this recipe and that makes it great when your stock gets out of hand and goes yellow before you use them for other pickle recipes. They should be pealed, seeded, and clear water washed. German Mustard Pickles (Senfgurken) Makes 2 to 3 quarts. • For the Pickles: • 4 1/2 pounds pickling cucumbers or English cucumbers • 1 onion, sliced • Fresh dill weed sprigs • For the Brine: • 2 cups white-wine vinegar • 2 cups water • 2 1/2 cups sugar • 1 tablespoon yellow mustard seed • 6 juniper berries • 1/2 teaspoon whole coriander • 1/2 teaspoon whole black peppercorns • 1/4 teaspoon whole caraway • 1/4 teaspoon whole dill seed • 1/2 teaspoon whole allspice • 1 crumbled bay leaf • 4 whole cloves • 1/8 teaspoon powdered ginger • 2 tablespoons salt How to Make It 1. Peel 4 1/2 pounds cucumbers, cut them in half lengthwise, scrape out the seeds, and then cut into 1/2-inch chunks. 2. Layer them in 2 to 3 clean quart canning jars together with some sliced onion and fresh dill sprigs. 3. In a large nonreactive (no aluminum) saucepan, make the brine by bringing 2 cups white-wine vinegar, 2 cups water, 2 1/2 cups sugar, 1 tablespoon yellow mustard seed, 6 juniper berries, 1/2 teaspoon whole coriander, 1/2 teaspoon whole black peppercorns, 1/4 teaspoon whole caraway, 1/4 teaspoon whole dill seed, 1/2 teaspoon whole allspice, 1 crumbled bay leaf, 4 whole cloves, 1/8 teaspoon powdered ginger and 2 tablespoons salt to a boil. Cook for 3 minutes or until sugar and salt are dissolved. 4. Pour the hot brine over the cucumbers in the jars to within 1/4 inch of the rim of the glass. Close immediately. Store in a cool spot or refrigerator. If you do not want to process further, keep them refrigerated or use proper canning procedures for long term pantry storage.

@@1gr8lpta I too, would like to find a sugar free version that is safe to can. That's one of the reasons I can't eat them now. -also diabetic. (they are best canned because they sit for a while absorbing the flavors)

I use cucumbers in stir fry and in vegetable soup. For soup, I just freeze seeded cucumber chunks. It's kinda like zucchini.

Using cucumber juice.... You can puree some other fruits like strawberries or blue berries, and add honey and make POPSICLES!!!!

I have made Poor man's Cucumber Caviar or Roe and prefer it to the Real Caviar/Roe. Peel English cucumbers, cut open and remove the soft seed section with a spoon then dice the cucumber into 1/8" to 1/4" bits. Saute in a little cooking oil until they start to become a little rounded and change opaque in color. Serve on cream cheese topped crackers or add to sour cream for garnishing appetizers or salads. You can change up the flavor by adding your favorite spices. Delicious hot or cold 😋

My favorite way to use Cucumbers in a drink is to add a fresh Lime quartered along with the Cucumber slices and let it sit for a bit in cold water. Yumm

I take the larger cukes and dehydrate them…then I make cuke powder to add to soups, dressings and smoothies…. I love cucumber sandwiches…a sliced cucumber, tomato, sweet pepper on toasted bread with some Ranch or homemade dressing using yogurt,dill,salt n pepper. My husband likes Ranch with pickled jalapeños blended into it. We also like cucumber slices with sour cream with a little sugar, chopped green onions, chopped celery and some chia seeds mixed in them.

I make spicy pickles for myself and do regular pickles for the wife and bread and butter pickles slices for my daughter and what ever cucumbers I have left over after canning I give the rest to my local food pantry

I make my brine with vinegar. Here is my fav bread and butter pickle recipe. In a lg. pot bring 1 cup sugar, 2 cups vinegar, 3 Tbs kosher salt, 2 Tbs yellow mustard seeds, 1 tsp ea dry mustard powder, turmeric, and 1/2 tsp celery seeds. Stir and bring to boil until sugar is dissolved. Add 2 sliced medium onions and 2 1/2 lbs sliced cucumbers. Cook over high heat stirring for 1 minute. Put cucumbers and onions in 4 pint jars. Pour brine to cover veg's in ea jar. Put lids on and store in refrigerator after cooling.

My grandma was on a juice kick years ago and she would make this concoction of beets, apple, fresh parsley and carrot juice in the juicer and boy ill tell ya it was delicious and it was like getting a transfusion of energy right on the spot when you drank down a glass..

Back when I was canning for my family I remember slicing my files and packing them, a clove of garlic, a handful of dill and.salt in my jars, sealing them and putting them on a shelf in the basement and they'd be.pickles in no time. I'm sure I've missed a step , but they were great dill pickles. Maybe we added a bit of black pepper! It's too long ago for me to remember? Those are find memories! :-)

Another thing to do with cucumbers is to make Benedictine and dehydrate the pulp and grind into powder. Use as a hydrating drink or into smoothies.

Nice to see a productive harvest. One thing I have learned over the years when making relish, use a meat grinder. Gives you smaller consistent sizes for onion, peppers and cucumbers, but makes it so much faster.

👍My mom made the best sweet pickle relish with cucumber peppers cabbage and onion's!!! 😋 It was cooked in a big cettal for hours and canned. Me and my brother used to watch it boil and make valcannos! 😂 Boy was that good everyone loved it, made it every summer!

Those are all new ways to use the cucumbers. I've made old fashioned add him pickles & relish. But never fermented them. Nor have I dehydrated them. When I get my new homestead I'll have to try some of these ways. Thank you.

Yes, a nice blessing to have is too much but then you want it not to go to waste. I've been hearing about cucumber juice lately. It does sound like a refreshing drink. Using the dragon egg cucumbers for the juice? That looks so good. The kids are so cute helping you make it. I think I'd try mint with it. I've got to try growing the china jade cucumber. I like to add garlic slices and dill to my fermented cucumbers. Sounds like you guys like garlic…since you put garlic on your cucumber chips. Kale and garlic is good in the dehydrator too. I grow lots of kale.

YOU NEED TO MAKE CUCUMBER GAZPACHO!!! And can the GAZPACHO for a quick cool lunch on hot summer days [I remember cucumber gazpacho being a favorite since I was a kid]!! For Cucumber Juice, when you add a little lemon and mint [Add a touch of sugar and salt] MUST BE COLD~! ...... I drink gallons of it! [I also replace the Lemon with ACV occasionally]
