He is udon old super heated oil. In the beginning of video we just see that old oil in the kadhai is being refreshed and he is using Palm Oil which again is bad for health.

Technology is nice but quality & taste of final Sev found not upto the mark Basically you used palm oil which is not viable You have not added the spices Like ajwan , jeera pud , dhaniya pud , Miri pud , hing Tasteless unhealthy crispy Sev Sorry boss I disliked it Yes sure machine are nice Which saves time & manual energy
