As someone learning Japanese I struggle sometimes trying to figure out when to use the on reading and the kun reading for kanji. Is there an easier explanation for it since some kanji have more than one kun or on reading?

Generally when there's 2 kanji you use on reading and with a single kanji you use kun reading. But it has a LOT of exceptions, the only way to reliably read them is just learning vocabulary and you'll pick them up eventually, there's no secret pattern. It's kinda similar to English in that you cannot be 100% sure how a word is pronounced unless you already know it
