I don't think that Zach had "a proper chance" to turn his head during Casa because Molly was there. I think that Zach would have easily turned his head otherwise. On some deeper level she knows this, so when things are great she is happy and secure, but one small thing, and she thinks he is off her. The fact she was scrutinising his face so much at the challenge, when almost all of the guys would have laughed (usually due to awkwardness or embarrassment rather than joy) says a lot.
