you can also pickle it in vinegar, water, salt, sugar and spices like bay leaf and allspice and it's really nice and crunchy kinda like a pickle (cucumber)

@@7bradyanne I thought they were weird at first glance too. But, the pickling brine is where they pick up all of their flavor. You do cut the skin off and only use the white flesh or at least we do. They're actually really decent and worth a try. I'd still rather have pickles, but we eat so much watermelon as it is, I don't see why we should let all of the rind go to waste.

When I was child, I used to feed watermelon rinds to my grandma’s chickens. They LOVE that stuff for some reason. I would also feed them live grasshoppers

Watermelon rind is lower in sugar and higher in fiber than the flesh and when eaten together it slows the absorption of the sugar, which in turn mellows the blood sugar spike.

Alternative...... Grate the green skin and dry it in the oven, mix with spices it makes excellent seasoning. Grate the white rind or cut into small pieces shallow fry lightly with spices or you can enjoy raw with curd and some spices 😊😊
