Actually, controllers these days may have analog buttons which indeed are pressure sensitive. You just need a game which supports that feature. The PS2 and PS3 controllers had such buttons. However, they got replaced with standard digital buttons again in the PS4's controller. Reason (allegedly) being, the lack of interest by the developers to implement this feature in their games.

But that does exist. Games like banjo Kazooie and old school platforms had press sensitive buttons. Press A harder to jump higher and stuff like that.
