Sounds like you'll love it just be aware this isn't persona where demon fusion is basically an optional feature. It's required to beat the game even on normal unless you're really really good

Yes it is, despite Atlus having access to the original songs in their uncompressed form the music remains quite heavily compressed. You can notice it particularly well in the demon showcase videos they did a few weeks ago

It made sense that Raidou could summon him and not Demi Fiend since Yoshitsune is not originally in Nocturne's demon compendium.
