12个荷花酥内馅:
鸡蛋: 2只 (只需要蛋黄)
椰蓉: 80g
细白糖: 25g
黄油: 30g
1,把以上食材全部一起搅拌均匀。揉搓约2分钟。做成12个圆球状。
保鲜膜盖好,放入冰箱,冷藏。

粉色水皮:
清水: 55g
食用颜料: 5-8g (或者色素: 3-5滴 )
低筋面粉: 160g
细白糖: 20g
黄油/猪油: 25g

4,取出粉色水皮,分切成12份,搓成圆球形。用保鲜膜包盖。防干燥。
5,从最先做的开始拿出一个,把油酥球包入,再搓成圆球形。
松弛15分钟。
6,15分钟后,擀成长方形,再上下折叠。
再 松弛15分钟。
7,重复上一步。
再 松弛15分钟。

8, 冰箱里拿出椰蓉馅。
把松弛好的面皮擀成大概正方形,把椰蓉馅包入,搓圆。
9,在做好的圆球上切三刀,出现6个花瓣。
10, 120-140度油温,炸约15-20秒。期间观察花瓣如果没有炸开,需要筷子轻轻挑开一下下,好让炸好后的形状更像荷花。

Low gluten flour: 160g
Fine sugar: 20g
Butter/Lard: 25g
Step 2. Stir all the above ingredients together evenly. Knead into a smooth dough. Cling the dough with film.

Oil skin:
Low gluten flour: 85g
Butter/Lard: 50g
Step 3. Stir all the above ingredients together evenly. Knead into a smooth dough. Divide into 12 portions and shape into balls.

Step 4. Take out the pink colour water skin, divide into 12 parts, and shape into balls. Cover with plastic wrap. Protects against drying.
Step 5. Take one out of the one you made first, wrap it in the pastry ball, and shape it into a round ball.
Relax for 15 minutes.
Step 6. After 15 minutes, roll it into a rectangle and fold it up and down.
Relax for another 15 minutes.
Step 7. Repeat the previous step.
Relax for another 15 minutes.
Step 8. Take out the coconut filling from the refrigerator.
Roll the loosened dough into a roughly square shape, fill it with coconut filling, and shape it into a round shape.
Step 9. Make three cuts into the prepared ball, and 6 petals will appear.
Step10. Oil temperature is 120-140 degrees and fry for about 15 seconds. During this period, observe that if the petals have not exploded, you need to use chopsticks to gently open them so that the fried shape will look more like a lotus.
