In order to generate a proof of correct manipulation for videos too efficiently (in a similar way to what is done for images), could it make sense to generate the proof not for the whole file, but by selecting at random (in a provable way) portions of the video and then compute the proof of correct manipulation just for that subset? Then, if these random portions are kept secret and the more they are, the harder it should be for an adversary to modify the video without being detected. Still, you may need too many portions to be safe. Another approach may be combining the frames of the video in such a way that it is harder for the adversary to modify the video without being detected? Or using some hash function with homomorphism properties such that you prove manipulation operations to be valid over the hashes and imply tha same holds for the videos? Or maybe you keep the connection among the original video and the hashes using ZKP for each manipulation step?
