Ingredients for zucchini meatballs baked in the oven:
- 1-1.2 kg fresh zucchini;
- 1 large carrot;
- 1 large onion;
- 100 g semolina;
- 100 g wheat flour;
- 1 tablespoon of salt for zucchini (see video);
- 1/2 teaspoon in the mixture;
- 1/2 teaspoon freshly ground pepper;
- 5-6 cloves of garlic;
- 1 bunch of fresh parsley;
- 1 bunch of fresh dill;
- 10-15 ml oil to help shape the meatballs;
- 20 ml oil to sauté the vegetables in the pan;
After grating the zucchini, add salt and let it sit for 5-10 minutes. Then squeeze out all the excess water very well, and add it to the final mixture.
