most bachelors buy a nonstick pan as their first pan, but once you master stainless steel pans, you can cook everything in it without worrying about scratching the coating or toxic chemicals.

Tip, heat it up on medium to begin with. After a couple of minutes, put a tiny amount of water, and if the water does dance around the pan (leidenfrost effect), then turn the stove to low heat. Then, put your avocado oil or whatever oil you use. Then a tiny amount of butter to truly create a frictionless surface. If you dont turn the heat to low, the egg will have a higher chance of burning and will most likely look burned.

That's normal, that's the temperature you sear meat at . As for smoking your house, you & your family might be new to this, but to people who sear and cook steaks it's an everyday thing, however; you can sear it outside the house on a portable stove, or just get a fan in the kitchen and point it towards the windows like what I do, the smoke wil be gone in 30 mins .

Great question. If you add the oil first, you risk burning the oil before the entire pan is hot. It's best to gently heat the pan, then add oil to swirl. It will minimize sticking. Adding the water is optional once you're more used to using stainless steel cookware.

Don't wait, the pan needs to be hot enough for the effect to work. But don't let it get way too hot either : the nonstick effect will still work, but the heat might still be too high and burn your food. There's a sweetspot. Once the pan gets cold again, food will stick again.

but that egg is burnt. i want my eggs to be completely white on the outside, without any burnt parts or crisp or bubbled up parts. and the yellow runny. over medium and blemish free.

Put yours in with a thin layer of water and cover with a lid. Steam will help your egg from not burning. You can also poach your egg if that's something you can look into.

Yes but you had to get the heat so high you burnt the heck out of the egg whites.

You obviously have to turn down the heat once you’ve added the oil…

@@scrubsjlAnd why is that? I assumed the high heat makes it nonstick, so turning it down before the egg would seem pointless at face value?
@scrubsjl

@@CptApplestrudl I guess it’s because the “Pores” of the stainless steel have already closed and sealed by that tim (which gives it the “Non Stick” properties) It’s just so the oil cools down a bit more and isn’t hot as if you were frying chicken, while the surface of the pan remains hot enough to non stick. Once the steel is hot it is way easier to retain the heat then starting with a cold pan…I hope that somehow makes sense… However I’d always recommend using a touch of oil when cooking eggs in stainless cookware, since you can never really get it to “Not stick” a 100% without any oil at all IMO.

You can reduce the heat to minimize browning after the pan is fully heated.

Not necessarily. Once your pan is hot enough and oiled, you can lower the heat to your desired temperature.

Why not to add a specifc range of temp? Someone with enought money to buy a ss skillet can buy a thermometer. Less time in the guessing, faster results.
