Here’s a pasta machine I found that makes a 4 mm in diameter noodle size that’s perfect like knife cut Khao Piak size. Kinda similar size to what I’ve eaten in Laos which they use more tapioca than the rice flour by 20-25% that makes it more sticky and soft. a.co/d/1WlgfF8

You wrote 26 Oz. Of tapioca flour. And said one bag. 1 bag is 16 Oz. Which is it?

If you want to make the noodles more sticky, more tapioca? Like how much more? Thanks

If you want it more sticky, do the opposite and use more tapioca flour than the rice flour by 20-25%. You can even add 1-2 TBS of sticky rice flour (green bag) it makes the noodles a bit more dense.

For Laab, usually lean meat is used. I would use the sirloin or any portion without the fats.
