Khao Piak Sen / how to make rice noodles for soup
1 bag rice flour 16 oz red bag (save 1/4 flour)
1 bag tapioca flour 16 oz blue bag
4 cups hot boiling water
Process;
Save 1/4 rice flour (red bag) from the bag to flour the dough.
Mix both flour and 4 cups hot water together. Then mix the wet flour in the kitchen aid mixer on speed 2 for about 3-5 minutes. Take out the dough and knead it a little to mix well. Make ball size dough & roll it out 2 times in pasta roller, flour it, and then use the pasta cutter to cut the noodles.
