In min 0:52 It isn’t enough to put the last chiral carbon’s alcohol on the left for L-glucose (and other sugars), you have to change all the alcohols to their respective opposite side. If not then you will get a different sugar (an epimer in 2,3,4 of L-glucose, not L-glucose) Same problem for fructose

I do talk fast, I recommend going to settings (the gear icon) and changing the entire video speed to be slow enough that it works for you.

If speaking about the Fischer projection (looks like a flat cross molecule), then groups on the horizontal line are coming out of the page, by convention. While groups on the vertical line are going into the page, by convention. Fischer projections are flat representations of three-dimensional molecules, particularly ones with chiral centers. That means what might look flat is not, in reality, a flat structure.
