Looks fantastic, If/when I have one of these I'll have to do chicken hearts, garlic bread, sausages, cheese and beef all at the same time! The resting rack looks ideal for the garlic bread also.

Thinking about getting a pizza oven to start my micro bakery 👀🤔 I make artisan sourdough and no one ever slices their bread to show us the results when using pizza ovens; I wish I could see how well the air pockets develop. Looking at tons of brands I loooove the shelf on this one.

Ummm’ so , the finished product has the thermal blanket exposed ?……. And the sensor is built under all that coverage, and when it fails ? How is it replaced ? Smoke stack , raw cement , no in between ‘ real thermal oven ceramic lining ‘ ???? Yeah’ American standards are way different from the country I’m in , Nice pre made product , but still a lot of engineering needed and smoke stack to Eletrical side , umm , there’s heat and especially it’s long term effect on wiring products. In your country there’s a lot of suing and it’s a national past time from what I see , your making yourself set up for litigation . The other post , show a series of Fantastic! Quality build ovens and I must say , very very impressed , I think you should view them .

Hey Miles, we can make you an overlay grate with a tighter pattern for briquettes if you feel the spacing on the 1 - 1/4 inch bars is too wide.

I was thinking about, after I wrote you, and thought perhaps it would be better to light those things right on the fire brick deck, else wise you may not have the heat distribution needed to feed a beast of that size! In this video they guys seem to be using two different items in the caulk gun. There seems to be a Grey product and a Tan one. What is the difference?

Great question, The vent pipe we use is extendable. Extending the system through the roof was done by another. Combustible material like a roof cover, need the be minimum 10’ away from the chimney cap.

Hi Paul, Thanks for the positive remark. I was very inspired by the recipe from the Norcinos in Marino Italy so I decided to try the recipe using a locally raised organic pig. We butchered the pig in our test kitchen while teaching a class in butchery skills. I actually manufacture products for chefs, but part of my job is also to inspire others to get off their ass and cook. As you may have heard, imitation is a form of flattery. why a copy cat if someone cooks a recipe they saw or found out about? Trying to make food that others perfected is great, that gives you an achievement and knowledge to make different things and you know you can do it. There is no copy rights for making food is there?
