Beautiful and exquisite menu. The tempura chicken wings looks crispy and delicious; the fish with the risotto look amazing and the ginger mousse with the pineapple and coconut compote look delightful. Love the chocolate leaf. Beautiful presentation as well. Thank you for sharing

When I first started learning about how Italian Cheese was made, I really found it interesting when I was learning the process that is used in order to make it with the appropriate consistency that is required in order to prepare it the correct way.

Hate to say it, this is more work than necessary! Julia covered it early in her career: eggs, a dash of water, beat until they come together, about 15 seconds! 1 Tablespoon butter melted in the hot skillet, pour in eggs, keep the pan moving in a circular motion until the eggs set but arrn't browned. add filling (but not too much!) With a swift jerking motion, pull the pan towards you. The omelette will hit the side, flip onto itself and the first fold is done. Carefully unmold it onto the plate so it folds over the first fold: voilà, perfection! I just made one for my dinner tonight! A perfect cheese omelette with a light tomato sauce italianate as a garnish. Délicieux! I used 2 large eggs; if they are smaller, go ahead with three eggs!

It’s refreshing to see a chef, a man, that is an expert and feel no need to attack others or insult and yell and scream obscenities and beat their chest by degrading others…. He is not afraid or threatened by others and their different tastes and methods. He knows that taste is subjective and let the food talk, not the chef

I just bought short ribs. I dont have five spice powder, but will mimic it. I dont have fresh ginger but have dried. I'll enjoy making nice smoked short ribs this weekend. I have always enjoyed Steven Raichlin. I have a couple of DVDs of his from the 90s. BBQ university and Primal grill. So inspiring!

The only untruth is that half a lb of pasta serves 4 people. Perhaps 2 with other courses unless they eat like birds. If thats my supper just the pasta than 8oz is enough for me. Looks great Maryann.

Lovely video. One thing I have to question is the age regression they did of Martha Washington and how accurate it is. The reason I say this is that when a portrait was done, the artist would put their own interpretation of the subject. George Washington for example, he had many portraits done and if you look at each of them, yes you could tell they were the same man but you could see differences in how the artist portrayed him. The same would be true of Martha. So there is no way of knowing how accurate the photo of Martha that was used for regression. George Washington on the other hand had a regression done. His wax figures are displayed at Mount Vernon. His regression was probably pretty accurate as they used a life mask of him that was done in his early 50's. So they had his actual bone structure for use. Look up Houdon's life mask of George Washington. I have read a number of books on George and Martha. I remember a couple of instances were people gave a description of her. One of them was that she was a very pleasant woman but she did 'not have one mark of beauty on her". Another one came from a soldier that saw her when Martha stayed with him during the war, he stated she was "short, thick and very motherly". I don't think age regression that relies on a photo is going to be very accurate as the artist most likely put a bit of his own spin on the subject.
