I find the color of Baltic Porter in the BJCP guidelines quite questionable. 33 to 59 EBC is ridiculously low, I don't know a single commercial example that's even below 70, and the ones BJCP lists as examples are black as night. The two examples in this video are also much darker than 59 EBC. I've also never heard or seen anyone brew for example a 40 EBC Baltic Porter. In general, BJCP is really weird about dark styles. I don't really understand why the guidelines are allergic to over 80 EBC, as even Imperial Stout guideline ends at 79 EBC (40 SRM) when they are quite often much darker than that.

The problem is your glassware probably has too much of a build up of film from previous uses. And the glassware could also still have some of the manafacturing protective "wax" on board. Both are difficult to remove without the right chemicals like renovate powder. The oxi detergent is probably fine for maintenance cleaning. I just use water for maintenance cleaning. Also you may need a better brush 😊 oh and water harness plays a big role. Happy to chat more.

Personally, I'm not a fan of the craft master, I find it difficult to get a good pour and hard to clean. And then I put my hand heat on it. But, it's a glass designed for IPAs which people like. Cheers! I did a beer clean glass video too. I later found out the best and fastest way is to take a spray bottle and put just a little food grade sanitizer, like Starsan, and just mix it in there. Clean your glass the regular way, then spray that inside and turn upside down and let dry. Cheers!

Someone lied to you when they told you ale can be produced by soaking malt in hot water for an hour. The high temperature at 68 denatured the low temperature enzymes that produce ale and lager, Beta in particular. Beta is responsible for conversion, which occurs at 60. You have been taught how to produce American, home brew style, moonshiners' beer, that was renamed ale and lager by marketers that came up with stories, recipes and contests to set the hook. It only requires one step to make moonshiners beer because only glucose is needed for making the beer. Glucose is responsible for primary fermentation and ABV. The home brew/moonshiner's method skips the steps that are used for producing ale and lager because the steps get in the way of a moonshiner. Conversion, dextrinization and gelatinization are skipped in moonshining. You'll need to use the step mash method and high quality, under modified, low protein, malt for producing pseudo, ale and lager. To know when malt is under modified and low in protein, which is the malt that ale and lager brewers use you'll need to learn about the chemical acronyms and numbers on a malt spec sheet that comes with every bag of malt. Malt spec sheets are online from every malthouse, and they provide E Caveat Emptor. Malthouse produce malt for grain distillation, which is high modified, high protein, malt and malt that produces ale and lager. Without a malt spec sheet, you have no idea which malt is which in a bag. A recipe is worthless when the malthouse that produced the base malt isn't listed because a malt spec sheet cannot be obtained. When you learn how to produce ale and lager you won't need recipes because they are a given, only a malt spec sheet is needed.
