I've watched several videos of karahi chicken by cooks in Pakistan in restaurants. This guy is doing in a very amateur manner. I have my own adaptation of this recipe that better suits Indians, especially Tamilians. Dumping chicken pieces in a big pool of oil and then taking out what seems excess is very messy, unhealthy and cumbersome
