I always ask which is more TASTIER, remember I said "good taste", but most will answer - denser, fluffier, melt in the mouth, crispier, etc. What happened to people's common sense of taste, only what you see and what you touch

We call it ghee… and make this In India… for millenniums

They're actually different! We toast the milk solids with brown butter, instead of removing them for ghee :)

Try adding a little salt, and maybe try a different brand of cocoa powder - we liked Ghirardelli here!

I just tried this for the first time, excellent! What are everyone's thoughts on not greasing the wall of an angel food pan so the batter will grip and rise making your cake taller? Also, I should have mentioned that I used the method in the comments of putting the pan right out of the oven onto a cold wet towel for 10 minutes, no less no more.
